chicken thighs and Greek potatoes

one of my favorite things about Sunday night is making dinner with the middle child and the youngest. We cooked potatoes with fresh lemon juice, chicken stock, olive oil, garlic powder, oregano, and salt and then after cooking them for about half an hour, we added a bunch of chicken thighs with a spice rub on top for about an hour. It was so good! The oldest, who is our toughest critic, said we leveled up. I don’t like cooking, but together with the kids, it’s fun!
