What are you serving this weekend? I list three Epicurious favorites that have become our go-to recipes. If I’m going to cook something while watching three children, the recipe must be simple and the end result delicious and kid-friendly.
Is there anything better than some buffalo wings on Super Bowl Sunday? Easy to eat, delicious, and so easy to make. This recipe calls for you to bake the wings on racks so that the fat drains and your wings come out crispy on the outside and tender on the inside. You take them out of the oven, put about a third/half on a separate plate for the kids, and then use tongs to dip the rest in the sauce of your choice (I’m partial to the five-ingredient Buffalo). I would also buy some blue cheese dressing (I like the Whole Foods brand) so you can dip the spicy buffalo wing in it. Wow.
Creamy Potato Salad with Lemon and Fresh Herbs
This one is a little more complicated, but it’s both satisfying and packed with herbs, so it feels healthy. I would cook a little bit more potatoes than the recipe calls for so you can take some cooked potatoes out for the pickier kids before you start adding the rest of the ingredients.
If you search for dips, you’ll see one on Epicurious with 50 ingredients. Hahaha! I wish. That recipe makes this ingredient list less intimidating by comparison. If you still don’t have time for all the ingredients, just melt Velveeta and a can of salsa on the stove. If you want something heartier, add a pound of cooked sausage and combine everything in a crock pot. I think the key here is the Velveeta, though I hate to admit it. Tastes so great! Hey, your wings and potato salad are on the healthier salad, so this is the one indulgence. Enjoy!
